Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce 🥑🦐🥭🌶️

🥘 Instructions

1️⃣ Make the Mango Salsa

  1. In a medium bowl, combine diced mango, red onion, bell pepper, jalapeño, lime juice, cilantro, and a pinch of salt.
  2. Toss gently to mix, then set aside to let the flavors meld while you cook the shrimp.

2️⃣ Cook the Shrimp

  1. Pat shrimp dry with paper towels.
  2. Season with chili powder, smoked paprika, cumin, salt, pepper, and a squeeze of lime juice.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Cook shrimp for 2–3 minutes per side until pink, opaque, and slightly charred. Remove from heat and set aside.

3️⃣ Make the Lime-Chili Sauce

  1. In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, lime juice and zest, chili sauce or powder, honey, and salt.
  2. Mix until smooth and creamy. Adjust heat to taste.

4️⃣ Assemble the Bowls

  1. In each serving bowl, add a scoop of cooked rice or quinoa.
  2. Top with avocado slices, shrimp, and generous spoonfuls of mango salsa.
  3. Drizzle with the lime-chili sauce.
  4. Garnish with extra cilantro and lime wedges.
