🥘 Instructions
1️⃣ Make the Mango Salsa
- In a medium bowl, combine diced mango, red onion, bell pepper, jalapeño, lime juice, cilantro, and a pinch of salt.
- Toss gently to mix, then set aside to let the flavors meld while you cook the shrimp.
2️⃣ Cook the Shrimp
- Pat shrimp dry with paper towels.
- Season with chili powder, smoked paprika, cumin, salt, pepper, and a squeeze of lime juice.
- Heat olive oil in a skillet over medium-high heat.
- Cook shrimp for 2–3 minutes per side until pink, opaque, and slightly charred. Remove from heat and set aside.
3️⃣ Make the Lime-Chili Sauce
- In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, lime juice and zest, chili sauce or powder, honey, and salt.
- Mix until smooth and creamy. Adjust heat to taste.
4️⃣ Assemble the Bowls
- In each serving bowl, add a scoop of cooked rice or quinoa.
- Top with avocado slices, shrimp, and generous spoonfuls of mango salsa.
- Drizzle with the lime-chili sauce.
- Garnish with extra cilantro and lime wedges.
