3. Assemble the Skewers
- Thread the shrimp and pineapple: On each skewer, alternate threading the shrimp and pineapple chunks. You can place two or three shrimp between each pineapple chunk, depending on the size of the skewers. Make sure they are arranged snugly, but not too tightly, to allow for even cooking.
4. Cook the Skewers
- Grill the skewers: Preheat your grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and are fully cooked. The pineapple should have a slight char and be heated through.
- Baste with glaze: While grilling, brush the skewers with the spicy honey glaze during the last minute of cooking to give them a glossy finish and an extra layer of flavor. Be sure to coat them evenly on all sides.
5. Serve and Garnish
- Remove from the grill: Once the shrimp are cooked and the pineapple is charred to your liking, remove the skewers from the grill and place them on a serving platter.
- Garnish: Garnish with fresh cilantro and a squeeze of lime juice, if desired, to add brightness and freshness to the dish.
- Serve: Serve the shrimp pineapple skewers with your favorite side dishes like a light salad, rice, or grilled vegetables.
