Step 1: Prepare the Zoodles
- Spiralize zucchini into noodles using a spiralizer or buy pre-spiralized from the store.
- Place in a colander, sprinkle lightly with salt, and let sit for 10–15 minutes to release excess water. Pat dry with paper towels before using.
Step 2: Sauté the Shrimp
- In a large skillet, melt butter over medium heat. Add garlic and crushed red pepper and cook for 30–60 seconds until fragrant.
- Add the shrimp, paprika, salt, and black pepper. Cook for 2–3 minutes per side, or until pink and just cooked through. Remove shrimp from the skillet and set aside.
Step 3: Build the Sauce
- In the same skillet, add the vegetable broth and bring to a gentle simmer. Let it reduce slightly for 2–3 minutes.
- Stir in the lemon juice and half of the parsley. Add the shrimp back into the pan and toss to coat.
