Shrimp Scampi with Zoodles (Low-Carb, Garlic-Butter Goodness) 🍤🍝

Instructions

Step 1: Prepare the Zoodles

  1. Spiralize zucchini into noodles using a spiralizer or buy pre-spiralized from the store.
  2. Place in a colander, sprinkle lightly with salt, and let sit for 10–15 minutes to release excess water. Pat dry with paper towels before using.

Step 2: Sauté the Shrimp

  1. In a large skillet, melt butter over medium heat. Add garlic and crushed red pepper and cook for 30–60 seconds until fragrant.
  2. Add the shrimp, paprika, salt, and black pepper. Cook for 2–3 minutes per side, or until pink and just cooked through. Remove shrimp from the skillet and set aside.

Step 3: Build the Sauce

  1. In the same skillet, add the vegetable broth and bring to a gentle simmer. Let it reduce slightly for 2–3 minutes.
  2. Stir in the lemon juice and half of the parsley. Add the shrimp back into the pan and toss to coat.
