Shrimp Stir-Fry with Broccoli & Carrots

Instructions

1️⃣ Prepare the Vegetables

  1. Bring a pot of water to a boil. Once boiling, blanch the broccoli and carrots briefly for about 2-3 minutes, or until the broccoli turns vibrant green and the carrots are slightly tender. Drain and set aside. This quick blanching will help preserve the crisp texture of the vegetables while softening them slightly for the stir-fry.

2️⃣ Cook the Shrimp

  1. Heat a tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic to the pan and stir-fry for about 30 seconds, or until fragrant. Be careful not to burn the garlic.
  3. Add the shrimp to the skillet and cook, stirring occasionally, until the shrimp turn pink and opaque, about 3-4 minutes. Remove the shrimp from the pan and set them aside.

3️⃣ Make the Sauce

  1. In a small bowl, whisk together the soy sauce, oyster sauce, sugar or honey, black pepper, and a little water (about 2-3 tablespoons). Stir until the sugar or honey is dissolved. This sauce will bring a delicious umami flavor and sweetness to balance the savory elements of the stir-fry.

4️⃣ Combine and Stir-Fry

  1. In the same skillet, add the blanched broccoli and carrots back in, along with the cooked shrimp. Pour the sauce over the mixture, and stir gently to coat everything evenly with the sauce.
  2. Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well coated with the sauce. The vegetables should remain crisp-tender, and the shrimp should be fully integrated with the flavors.
