- Prepare the dough. In a small bowl, mix the sugar, yeast, and lukewarm milk. Stir until the sugar dissolves and the yeast activates, about 5-10 minutes. The mixture should become bubbly and slightly frothy. In a large mixing bowl, combine the yeast mixture with the egg, vegetable oil, flour, and salt. Stir until a dough forms.
- Knead the dough. Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until it becomes smooth and elastic. If the dough is too sticky, add a little more flour. Once kneaded, place the dough in a greased bowl, cover it with a clean towel, and let it rise for 1-1.5 hours, or until doubled in size.
- Prepare the filling. While the dough is rising, melt the butter in a small bowl. In another bowl, mix the sugar and cinnamon to taste. Chop the walnuts (if using) into small pieces for added texture.
- Roll out the dough. Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, about 1/4 inch thick. Brush the melted butter evenly over the entire surface of the dough. Sprinkle the cinnamon-sugar mixture over the buttered dough and add the chopped walnuts, distributing them evenly.
- Shape the rolls. Starting from one edge, carefully roll the dough up into a tight log, pinching the seam to seal it. Slice the rolled dough into 1-1.5 inch sections and place the rolls in a greased baking dish, leaving a little space between them.
- Let the rolls rise.
