Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

👩‍🍳 Directions

1️⃣ Cook the Spaghetti

  • Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente.
  • Before draining, reserve about 1/2 cup of the starchy pasta water to adjust sauce consistency later.
  • Drain the pasta and set aside.

2️⃣ Sauté the Aromatics

  • In a large skillet over medium heat, heat the olive oil.
  • Add chopped onion and sauté for about 5 minutes until translucent and softened.
  • Add minced garlic and cook for 1 minute more until fragrant.

3️⃣ Build the Cream Sauce

  • Stir in the diced tomatoes with their juices and the chopped sun-dried tomatoes.
  • Add the heavy cream, grated Parmesan, red pepper flakes (if using), and Italian seasoning.
  • Bring the mixture to a gentle simmer and cook for about 5 minutes, stirring occasionally, until slightly thickened.
  • Season with salt and pepper to taste.
