1️⃣ Cook the Spaghetti
- Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente.
- Before draining, reserve about 1/2 cup of the starchy pasta water to adjust sauce consistency later.
- Drain the pasta and set aside.
2️⃣ Sauté the Aromatics
- In a large skillet over medium heat, heat the olive oil.
- Add chopped onion and sauté for about 5 minutes until translucent and softened.
- Add minced garlic and cook for 1 minute more until fragrant.
3️⃣ Build the Cream Sauce
- Stir in the diced tomatoes with their juices and the chopped sun-dried tomatoes.
- Add the heavy cream, grated Parmesan, red pepper flakes (if using), and Italian seasoning.
- Bring the mixture to a gentle simmer and cook for about 5 minutes, stirring occasionally, until slightly thickened.
- Season with salt and pepper to taste.
