Spicy Shrimp Wraps with Chipotle Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 1-2 tbsp chipotle in adobo sauce (adjust to taste for spice level)
  • 1 tbsp lime juice
  • 1 tsp honey (optional, for a touch of sweetness)
  • Salt to taste

For Assembly:

  • 4-6 soft flour tortillas
  • 1-2 cups shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion (optional)

Instructions

  1. Season and Cook the Shrimp: In a small bowl, combine paprika, garlic powder, cayenne pepper, salt, and black pepper. Toss the shrimp in the seasoning mixture until evenly coated. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until they are pink and opaque. Be careful not to overcook the shrimp, as they can become tough. Once cooked, remove from the heat and set aside.
  2. Prepare the Chipotle Sauce: In a small bowl, whisk together mayonnaise, sour cream, chipotle in adobo sauce, lime juice, honey (if using), and a pinch of salt. Taste and adjust the seasoning by adding more chipotle for heat or honey for sweetness, depending on your preference. The sauce should be creamy with a smoky, spicy kick from the chipotle.
  3. Assemble the Wraps: Warm the flour tortillas in a skillet or microwave for a few seconds to make them more pliable. On each tortilla, spread a generous amount of chipotle sauce in the center. Layer the shrimp, shredded lettuce, diced tomatoes, chopped cilantro, and red onion (if using) on top of the sauce.
  4. Wrap and Serve: Carefully fold in the sides of the tortilla and roll it up tightly to enclose the filling. Serve the wraps immediately while the shrimp is still warm. For a complete meal, you can serve the wraps with a side of chips, salsa, or a simple salad.
