1️⃣ Make the Taco Shells
- Preheat oven to 375°F (190°C).
- Use a round cookie cutter (about 3–4 inches) to cut circles from the flour tortillas (you should get 2–3 per tortilla).
- Brush both sides of each circle with melted butter, then sprinkle with sugar and cinnamon.
- Carefully fold each circle over a greased oven-safe rack (or use upside-down muffin tin to form taco shapes).
- Bake for 6–8 minutes, or until golden and crisp. Let cool completely.
2️⃣ Make the Cheesecake Filling
- In a medium bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and fluffy.
- Fold in the whipped topping until creamy and light. Refrigerate until ready to use.
