Instructions
- Prepare the filling: In a large bowl, combine the diced jalapeños, cooked shredded beef brisket (or pulled pork), softened cream cheese, and shredded cheddar cheese. Stir until everything is well mixed, ensuring the cream cheese coats the meat and peppers evenly. The filling should be thick and creamy, with a bit of heat from the jalapeños and a savory flavor from the beef or pork.
- Assemble the egg rolls: Place an egg roll wrapper on a clean surface, with one of the corners facing you (like a diamond shape). Spoon about 2 tablespoons of the filling onto the center of the wrapper. Be sure not to overfill, as the filling will spill out while frying. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom corner to the top corner, sealing the edge with a little water to ensure the wrapper sticks.
- Fry the egg rolls: Heat vegetable oil in a deep fryer or large skillet over medium-high heat. You’ll need enough oil to submerge the egg rolls partially. Once the oil is hot (about 350°F or 175°C), carefully add the egg rolls in batches. Fry for about 3-4 minutes, turning them occasionally, until they are golden brown and crispy on all sides. Use tongs to remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Prepare the honey dipping sauce: While the egg rolls are frying, place the honey in a small bowl and heat it in the microwave for about 15-20 seconds, just to make it slightly warm and easy to dip. You can also drizzle the honey directly over the egg rolls if you prefer.
- Serve: Once the egg rolls are crispy and golden, serve them warm with the honey dipping sauce on the side. The sweet honey perfectly complements the spicy, savory filling, creating a delicious balance of flavors with every bite.
