- π§ 3 garlic cloves, minced
- π₯ 1 medium carrot, diced
- π₯¬ 1 celery stalk, diced
- π§ 2 tablespoons butter
- π« 2 tablespoons olive oil
- π· 120 ml (Β½ cup) white wine
- π¦ 750 ml (3 cups) seafood or shrimp stock
- π₯ 200 ml (ΒΎ cup) heavy cream
- πΏ 1 sprig fresh thyme
- πΏ 1 bay leaf
