1️⃣ Prepare the Crust
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the bottom with foil to prevent leaks if using a water bath.
- In a bowl, combine Oreo crumbs and melted butter. Stir until well coated.
- Press firmly into the bottom of the pan to form an even crust. Bake for 10 minutes. Let cool slightly.
2️⃣ Make the Cheesecake Filling
- In a large mixing bowl, beat softened cream cheese until smooth and creamy (about 2–3 minutes).
- Add sugar and mix until fully incorporated. Add sour cream and vanilla; beat until smooth.
- Add eggs one at a time, mixing just until combined. Do not overmix.
- Divide batter into two equal portions. Stir melted white chocolate into one half, and melted semisweet/dark chocolate into the other.
3️⃣ Assemble & Bake
- Pour one chocolate layer into the crust, then gently spoon the other layer on top. Swirl if desired, or leave layered for a contrast effect.
- Bake for 55–65 minutes, until the center is set but slightly jiggly. Turn off the oven and let cheesecake cool inside with door closed for 1 hour.
- Remove from oven and cool completely, then refrigerate for at least 4 hours (or overnight).
