Triple Chocolate Cheesecake

👩‍🍳 Instructions

1️⃣ Prepare the Crust

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the bottom with foil to prevent leaks if using a water bath.
  2. In a bowl, combine Oreo crumbs and melted butter. Stir until well coated.
  3. Press firmly into the bottom of the pan to form an even crust. Bake for 10 minutes. Let cool slightly.

2️⃣ Make the Cheesecake Filling

  1. In a large mixing bowl, beat softened cream cheese until smooth and creamy (about 2–3 minutes).
  2. Add sugar and mix until fully incorporated. Add sour cream and vanilla; beat until smooth.
  3. Add eggs one at a time, mixing just until combined. Do not overmix.
  4. Divide batter into two equal portions. Stir melted white chocolate into one half, and melted semisweet/dark chocolate into the other.

3️⃣ Assemble & Bake

  1. Pour one chocolate layer into the crust, then gently spoon the other layer on top. Swirl if desired, or leave layered for a contrast effect.
  2. Bake for 55–65 minutes, until the center is set but slightly jiggly. Turn off the oven and let cheesecake cool inside with door closed for 1 hour.
  3. Remove from oven and cool completely, then refrigerate for at least 4 hours (or overnight).
