- 4 garlic cloves, thinly sliced 🧄
- 2 tablespoons olive oil 🫒
- Pinch of salt 🧂
👩🍳 Instructions
1️⃣ Prepare the Potatoes:
- Peel the potatoes and cut them into even chunks for uniform cooking.
- Place the chunks in a large pot and cover with cold, salted water.
- Bring to a boil over medium-high heat and cook for 15–20 minutes, or until the potatoes are fork-tender.
- Drain well and let sit uncovered for a few minutes to allow excess moisture to evaporate.
2️⃣ Make the Garlic Chips:
- While the potatoes are boiling, heat olive oil in a small skillet over low heat.
- Add the thinly sliced garlic and cook slowly, stirring occasionally, until golden and crisp — about 3–5 minutes.
- Use a slotted spoon to transfer the garlic chips to a paper towel-lined plate. Sprinkle with a pinch of salt.
3️⃣ Mash and Flavor the Potatoes:
- Use a potato masher or ricer to mash the drained potatoes until smooth and lump-free.
- Stir in the butter until fully melted and incorporated.
- Gradually mix in the warm heavy cream for a smooth, creamy consistency.
- Fold in the truffle oil, grated Parmesan, and season generously with salt and black pepper to taste.
