Instructions
1️⃣ Cook the Macaroni:
- Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package directions until al dente — tender with a slight bite.
- Drain the pasta and immediately rinse under cold water to stop the cooking and cool the noodles. Shake off any excess water and set aside.
2️⃣ Prepare the Vegetables:
- Finely chop the red onion, green pepper, and red pepper for even crunch and color in every bite.
- Grate the carrot and chop the fresh parsley. Set aside with the other vegetables in a large mixing bowl.
3️⃣ Make the Dressing:
- In a separate small bowl, whisk together the mayonnaise, spicy Dijon mustard, a pinch of salt, and freshly ground black pepper until smooth and creamy.
