Ultimate Lobster & Shrimp Mac and Cheese

  • 1/2 lb lobster meat, cooked and chopped (or 2 small lobster tails)
  • 1/2 lb shrimp, peeled and deveined (chopped if desired)
  • 1 tbsp butter (for cooking the seafood)
  • 1/4 tsp smoked paprika (optional, for added flavor)
  • 1 tbsp fresh lemon juice (optional, for a zesty kick)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions, usually 8-10 minutes, until al dente. Drain the pasta and set aside.
  2. Prepare the Seafood: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped lobster and shrimp to the pan. Season with smoked paprika, salt, and pepper. Cook for about 3-4 minutes, or until the shrimp are pink and the lobster is heated through. Add the lemon juice (if using) for a fresh burst of flavor. Remove from heat and set aside.
  3. Make the Cheese Sauce: In the same skillet, melt 1 tablespoon of butter over medium heat. Add the flour and whisk continuously to form a roux (a smooth paste). Cook for about 1-2 minutes to eliminate the raw flour taste. Gradually add the milk and heavy cream, whisking constantly to avoid lumps. Continue cooking until the mixture thickens slightly, about 4-5 minutes.
  4. Add the Cheese: Lower the heat to low and stir in the shredded cheddar, mozzarella, and Parmesan cheese. Continue stirring until the cheese is fully melted and the sauce is smooth. Season the cheese sauce with salt, pepper, garlic powder, and onion powder. Taste and adjust seasoning as needed.
  5. Combine the Pasta, Seafood, and Sauce: Add the cooked elbow macaroni and seafood mixture to the skillet with the cheese sauce. Gently fold everything together until the pasta and seafood are fully coated in the creamy sauce. Cook for another 2-3 minutes, allowing the flavors to meld together.
  6. Serve and Garnish: Transfer the lobster and shrimp mac and cheese to serving bowls or a large serving dish. Sprinkle with freshly chopped parsley for a burst of color and flavor. Serve immediately while the mac and cheese is warm and creamy!
