: Ultra-Moist Chocolate Cake with Ganache Swirl

👩‍🍳 Directions

1️⃣ Prepare the Batter

  1. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Make sure there are no lumps in the cocoa powder to ensure a smooth batter.
  2. In a separate bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until the mixture is well combined and slightly frothy.
  3. Gradually add the wet ingredients to the dry mixture, whisking until a thick, smooth batter forms. Scrape down the sides to incorporate all the flour.
  4. Slowly pour in the hot water or coffee and stir until fully combined. The batter will become thinner at this stage—that’s normal and helps achieve a moist, tender crumb after baking.

2️⃣ Bake the Cake

  1. Preheat your oven to 350°F (180°C). Grease and flour a round cake pan (8 or 9 inches), or line it with parchment paper for easy removal.
  2. Pour the batter into the prepared pan, smoothing the top with a spatula to ensure even baking.
  3. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  4. Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack and let it cool completely before topping with ganache.

3️⃣ Make the Ganache

  1. Place the finely chopped dark chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer—do not let it boil.
  3. Pour the warm cream over the chocolate and let it sit undisturbed for 1–2 minutes to begin melting.
  4. Using a whisk or spatula, gently stir the mixture from the center outward until the ganache is glossy and smooth.
  5. Add the butter and stir until fully incorporated. This adds richness and gives the ganache a luxurious shine.
